CELEBRATE THE MAGIC OF AYALA CHAMPAGNE AT FORBES STREET BY GARETH MULLINS

Forbes Street by Gareth Mullins is delighted to announce the next wine dinner in their exclusive series on Thursday, 25th July. This prestigious event will be run in association with Findlaters & Co. and will celebrate the heritage and craftsmanship of the Champagne house AYALA, an esteemed family-owned establishment founded in 1860 by Edmond de AYALA. Nestled in Aÿ, in the heart of the Grands Crus in France, Champagne AYALA is renowned for its purity of style and pioneering low-dosage wines.

 

The evening will commence at 6:30pm on The Rooftop Bar & Terrace at Anantara The Marker Dublin Hotel where guests can enjoy canapés paired with Champagne Ayala Brut Majeur NV. The perfect example of Ayala’s pure and elegant style, Champagne Ayala Brut Majeur NV is one of the best expressions of the Chardonnay grape. Light gold in colour with fine bubbles and balanced on the palate, this wine acts as the ultimate aperitif to set the tone for the evening.

 

Following this delightful start, attendees will proceed to Forbes Street by Gareth Mullins for a sumptuous 5-course tasting menu. Executive Head Chef Gareth Mullins has meticulously selected premium ingredients from local food producers to offer an extraordinary culinary experience.

 

The menu will feature such delicacies as tuna with watermelon and ponzu paired with Ayala Brut Nature NV, a wine of remarkable purity and precision with fine nose, and Dublin Bay prawns and lobster ravioli with a champagne butter sauce paired with Ayala Blanc de Blanc 201, made from 100% Chardonnay with a fruit of a unique blend from the best Cru’s of the Champagne region, providing a delicate, expressive and vibrant palate with a silky texture. For main course, Chef Gareth Mullins will serve a John Stone beef fillet with morels and shallots accompanied by Champagne Ayala Perle d’Ayala 2006. This Champagne is the jewel in the Ayala crown with a blend of 80% Chardonnay and 20% Pinot Noir.  To conclude the evening, guests will enjoy Wexford strawberries and cream with pink peppercorns alongside Champagne Ayala Rose Majeur. Rose Majeur is pale pink and delicate, with the freshness of red currants and raspberries.

 

The restaurant, with its open kitchen, intimate booths, low-level lighting, and extensive wine cave, provides an atmosphere rich in theatre and ambiance. Diners will experience the perfect pairing of these exquisite dishes with exclusive back vintage releases from Champagne AYALA.
